A rolling event lasts as long as you keep it around, but shows only days near the present. You add new days at the end of it by "rolling" its template.
Notice the Self-Signup Window row. Its fields control how many days the rolling event shows around the present. For something like tennis court reservations, you would make a rolling event show one or two weeks at a time. Additionally if your tennis club has a policy as to when people can first reserve the newly visible court times, you would set Time that New Days Start to match that policy.
